Sometimes it can feel a pain trying to eat your vegetables!! I’m totally with you on this!!
Have you tried roasting your vegetables instead?
This afternoon I chopped up potatoes, courgette, carrots and onions (enough for tonight’s dinner and tomorrow lunch – the easiest bulk cooking!!)
I then drizzled some lemon infused extra virgin rapeseed oil (see last pic) and left in the oven for 30 mins
Ta da! Serve with some meat, fish or whatever takes your fancy that will give you that protein kick! I opted for sausages from the local farm shop 😋
